avid/ shimano compatability help

newbie help please,
currently runiing juicy 3's with a 165mm rear i wish to upgrade to 180/185
i understand i need an adapter, but ive got my hands on some xt rotors (180)
question can i run an xt rotor on avid caliper? as avids are a 185mm do i need a shimano 180mm adapter to match the rotor - would avid caliper fit or do i have to stick with avid rotors?
could i go whole hog - 205mm?
are all 2or 4 piston systems better than singles?

should be fine.
