So will a DuraAce 7900 RD shift onto a 32t cassette? the specs say No, 28t max.

Nope my DA7900 front mech is working a treat on my Spark shifts far far better than any MTB mech ive ever used plus its 1/2 the weight of XTR, i do run a double up front 28t/42t.
just looking for the same peformance and light weight for the rear now0 -
Why not a XTR M971/972 GS? Only 20g heavier than the DA.0
