Converting Kona Shred

Hi,

I've got a 2005 Kona Shred http://www.konabikes.co.uk/2k5bikes/2k5_shred.php Which I've hardly used, It's just the right size for my missus and it's such a nice bike I'd rather change a few bits on it for her to use than sell it and get no money for it. I'd like to make it a bit more trail friendly as at time riding it long distance is hard work. It's completely standard at the moment, I've gotta change to a lady friendly saddle but I thought the motorcross size tyres might be a bit too big too.
What size tyres do you think I could get away with on those rims, thinest possible really?
Also, any other suggestions, I was thinking thinner bars maybe as, thankfully her shoulders aren't as broad as mine!

Any suggestions would be greatly welcomed, I'm sure it won't be the lightest bike ever but still better than some £150 snotter!
