Orange P7 conversion single speed --> gears

I'm seriously considering buying a P7 and my LBS has a p7 one on offer. I'm tempted due to the better rims / hubs e.g 317's vs 117's and Hope pro 2's vs. shimano delore disc.
I was always taught frame / wheels / fork in terms of specing as high as possible.
Want do people think? I'd be game for trying out single speed to help with my (lack of) fitness. then option of putting gears on.
So my questions are...
Is it worth going single speed to get better rims / hubs?
is my frame / wheels / fork thinking correct?
How easy is it to convert back? I know u need a hanger thing but can you just put on a rear cassette and run 8/9 gears on them same front cog? Or would i need to upgrade the whole crank?
how does the P7 climb? i had decided to not get one due to weight and longer travel forks but having demo'd a p7 pro and sat on one i think i'm changing my mind

Can you do without gears? I know I can't lol. Have a look in the FAQ for conversion tips.0

its a good question! i reckon i could learn to and it would help my fitness / riding but i'm sure that opinion would change after my first trip back to peaks / lakes lol

You need to test one ideally. If you have hills, don't bother would be my advice.0
