Steering 'too' responsive?

Hi,

I've been riding now for about 6 months or so and I've been getting into very small bits of maintenance and the like, but nothing serious. I'm basically just feeling my way around.

About 3 weeks ago I started experiencing a 'creaking' coming from the headset (the noise came when I pressed down on the bars or when exerting pressure climbing out of the saddle). Eventually the creaking was pretty much constant, so after a bit of research I read that it could be due to lack of grease on the bolts that attach the stem to the headset and so on, so I undid the stem, greased the bolts around the side, greased the 'down' bolt connecting stem to the headset, greased the spacers and tightened it all back together.

Guess what? It worked!! No noise!

Chuffed at my small bit of mechanical success I set off on a ride yesterday, and realised that the steering seemed very 'keen' (for want of a better phrase). I also noticed that when I took my hands off the bars and tried to ride no handed I nearly fell off as the bike started to veer really badly. This has never been a problem before and I've got no idea as to how I've caused it.

Anybody got any ideas?

Sorry if it's a bit of a silly question, but I'm really puzzled.
