What bike for the Ride across Britain?(£1000 approx)

I need your help and advice :?:
Myself and my partner are MTB'ers who have signed up for the Ride across Britain. I used to own one fairly cheap road bike and did the most I did was a 65 mile audax event.
As Mtb'ers we don't really have any idea of road bike technology and are lost as to what would be suitable for an average of 114 miles for 9 days straight. I don't fancy it on a MTB though!
Any suggestions as to what kind of bikes would be suitable?
Also any other advice would be much appreciated.
