How to identify Shimano Wheels?

Hi, I've just bought a 2nd hand Orbea Onix which is a nice upgrade on my old orange lugged carbon-tubed beast, but I can't work out what the wheels on it are. It's a 2005 model so that's about the vintage - Front and rear are 16 spoke with nipples mounted on a 'square star' shaped hub. That's the best way I can think of describing them. They are shimano wheels but I can't find a model number - any ideas what they are or where the model number would be?

    Model number should be on the hub barrel. something like WH-R540, which is the number of the wheels I have. They are 105 quality from 2003 ish. If they are a 600 series number they are Ultegra and 700(0) they will be Dura Ace.
