Brake Levers/Gear Shifters for my Latest Project

In the middle of sourcing components for my new touring frame (Surly LHT). Going to have butterfly bars or whatever you call them. Slightly puzzled as to what gear shifters and brake levers I can use. I was looking at the Shimano XT Shifter Pod M770. Will this be ok?

What type of brake levers should I use for cantilever brakes? Any recommendations? Most of them only seem to be V-brake compatible.
