changing the cassett

Hello im slowly building up a bike for the missus, and am wanting to change the gearing system it has grip shift at the moment and i want to put quick fire changers on it. However theres no such changers for an 18 geared bike. So was wondering if i can change the rear 6 geared cassett for a 7 geared 1, or will i have to change the hub?
