converting sunringle hubbed wheels to singlespeed-possible?

As above really,i am planning to turn a pile of leftover bits into a singlespeed machine for whizzing along towpaths etc,i have a single speed crankset and i have a nice set of mavic ex729 rims on sunringle hubs that i would rather use than have to buy another set of wheels.I have not used these wheels myself and did not buy them new so cannot be specific about the hub model,but was told that they are standard on the 2008 giant glory if this helps.I need to know if it is possible and what will i need to run these wheels as singlespeed,
