First MTB tour, advice needed

hi there
I will be going on a week and a 1/2 long tour in the Alps this summer, and I was wondering if anyone had any advice about how to transport all my kit.
I've used pannier bags before on my hybrid (for a two week road trip) and that was fine, but what would be the impact on performance/stability on rough/very steep/off-road terrain?
I will be camping and cooking so I have too much stuff to take in a rucksack.
should I get panniers on the front wheels too, just to balance the bike out a bit?
Frankly I don't know what I'm doing as I haven't ridden a MTB in years, so any helpful tips (on anything really) would be god-sent.

can't give you advice on panniers as i don't know but get a large camelbak with a large water capacity, make sure you get padded shorts else you will get saddle sores and get decent thermal clothing and the right repair gear so you don't get stuck out in the middle of nowhere
