Cheap font wheel to fit road and off road tyres

The front wheel on my girlfriends avalanche has buckled slightly and in trying to straighten it I have stuffed the spokes. The wheels were cheap ones I guess that came with the bike which we bought second hand.
We are off to Africa for a year next year and are thinking of taking bikes so I am gradually upgrading parts as I go. I am looking for a decent front wheel that will also fit the narrow road tyres she has for the commute in the meantime. I was looking at halo combats but they are 36mm when the tyres are only 1.25 inch.
The others I considered were shimano deore but then I read that they need shimano disks. Could I use shimano disks with non shimano calipers?
The bike I have was also second hand and came with some expensive DT Swiss weels but they are far to pricey to buy new!!
Does anyone have any advice?

Yes... in fact that is why I am going there. I am working for a year in a charity that runs the Pediatric department in Freetown.
The cycle touring will be a bit of fun on the side (and an excuse to buy lots of kit )0 -
Well full marks for your reasons, but seriously, have you been before? They use bicycles as moving targets in Nigeria and I wouldn't expect Sierra Leone to be any better, civil war over my arse......

I haven't been there but I have been to a few places where the foreign office suggests you shouldn't and I have been lucky enough to have minimal trouble so far.
They have had two rounds of democratic elections since the war and it has been fairly peaceful. I also have a couple of friends who have lived there for 3 years and in that time they only know of only a couple of incidents none of them more serious than the twice I have been burgled living in London recently!
