Neebie looking for commuter, fitness and light off road???

Hi, neebie here and first post. Currently bikeless after busting my 12 year old Saracen which had come out of retirement to start commuting to work. My firm offer the Bike to Work scheme so now in the market for new set of wheels. I've been doing my research and am now in a whirl of bikes that I think I am far more confused now than when I started.
I think that a MTB can fit the bill as I need a fast commuter, good for fitness but can handle some kerb bumping and light off road. I have been toying with a road bike but don't think that it would be versatile enough. Hybrids are just not my cup of tea.
I seem to have come to the conclusion of a lightweight hard tail MTB with lockout forks, lock them on the road and off for offroad, which I think will speed up road riding. Please feel free to correct me, I can find lock out or turn key which I think fit the bill but not sure about Poploc??? Shimano LX or better and I guess in my price range hydraulic disc brakes, of which I know nothing. I would fit road tyres to speed it up and swap tyres if planning off road.
Ideally like to budget between £500-£750 and I think that the Cube range looks rather smart but would really appreciate any suggestions or advice you have.

From what I'm reading, a cyclocross bike would fit the bill perefctly. I think the "in" term used by some is "Freeroaders" :roll: I have a Planet X Kaffenback, which is currently fitted with full mudguards, road tyres and a rack for commuting duties.
But with a 20-30 min turn around I can have it swapped back to dirt track mile muncher. Take all the sensible stuff off and fit so CX knobblies and away you go.
