More grip please.

I've just got myself some Dt Swiss E2200 wheels as a second setup for my Orange Five, now the question is what tyres to put on them and whether to go tubless or not.
I've got Mavic 819 rims with Conti Mountain King 2.4 Tubeless on atm but I find they havent been the best tyres to use on the last couple of places I've been Llandegla and Cannock, although they are generally very fast rolling I want something more grippy.
So my questions are:
1) Should I go tubeless at all (not forgetting what I'm using atm are tubeless)?
2) What grippy tyres do I buy?
3) Do I buy tubeless tyres or use sealant on standard tyres?
