Confused newbie seeks clarification between bike styles

Hi, Im looking to spend £600-800 on a mountain bike (C2W). I will be mainly using it for riding on roads, bike tracks & through the odd field or path. I won't be doing jumps etc.
I am looking for something fast & light. I have ruled out a hybrid/racer as I want bike to be able to do off road if required.
I have a shortlist of bikes which seem to be well regarded on here:
Specialized Rockhopper Disc,
Scott Scale 50
Chris Boardman Comp
or even GT aggressor XCR or Trek 6500.
Can anyone please explain what the differences would be with these bikes? Are these trail/XC/hardcore bikes? Sorry but I don't understand the terminology :oops:
Can anyone please advice which one may suit my needs best? I do not seem to be able to find these bikes on sale locally let alone get a bikeshop to let me try them.

They are all XC bikes - the Scale though being slightly more racy than the other too (long and low). You are in the right ball park though for light and fast - what is going to be best will be what feels best. All are good value.0
