I have a Giant Trance 3 Full Suss with Rockshox tora forks and fox floatr rear neither of these have lock out and i am doing the London to Brighton on it (my only bike) can i increase preload at the front and air pressure at the back to stop the suspension moving so much while on the road?

Yes. Though dont over pressurise it.

Be aware that adding spring preload doesnt actually alter the spring rate, just the force required to start the stroke. However it will sag less, so will not extend as far when you unweight it, which will limit total movement when honking on the bars and un weighting it.
